You can use the $customDateTemplates array in your _config.php. Look in event_calendar/_config.php and there is some documentation in there on how to use different keys to represent components of a date. You can put them all in that $customDateTemplates array.
You will have to update the date display for several scenarios -- same month, different day, same year, different month, etc..
