Sending a UserDefinedForm with a custom email that goes to the sender

Hi,
I have an application form that a user fills out which sends to a specific email ie admin@mysite.com.
Now obviously that form is set to send on submission to the recipient, however i also need a confimation email sent to the senders email address with specific instructions, not including the forms content.

Any ideas how this is possible.

I know that with the newsletter form that it sends a confimation email to the subscriber and this can be modified in cms/templates/email/SubscribeEmail.ss but how could I have a userdefinedform that sends 2 different emails, one to the sender and recipient?
