Ecommerce module for GBP

Hi,
I'm configuring the Ecommerce module for British Pounds. I've set the site currency in mysite/_config.php using:
// Set the currency of the site to be in GBP
Order::set_site_currency("GBP");But I also need to replace the Dollar sign ($) for the Pound sign (£) throughout. Can anyone advise how this can be done?
