I'm working on a site at the moment and I'm thinking about using the userforms module to allow visitors to the site the option to submit pictures that I will then use on the site.

Is that likely to make the site unsecure?

Unsecure in what way? Of course, taking anything from the user has the potential to be unsecure (even txt) but your assets folder should prevent execution of PHP files.
