Is there a way that I can remove the text on the page for example on the index page it has got home in bold and home underneath that to. How could I remove this.

all this can be found in your template. go to themes/yourthemename/template/ and edit the Page.ss, im not just sure if the $Title is what you mean. Just give it a try.
