Is there any way in the CMS back-end to get a read on how many "pages" exist in the site? I'd like to be able to do this as a complete number for the entire site and also perhaps by category/parent.

Anyone know how this can be done?

Yep well its pretty easy to do all you need to do is get a count of all the Pages listed. Best way to get this to work in the CMS is to build a custom report - http://doc.silverstripe.com/doku.php?id=site-reports im guessing.
