I might be being a bit hasty here, but I'm playing with the latest pre release of SS version 3. I can define has_many, has_one relations as before and it sets up the database ok. However, I'm wondering how best to manage the data in the CMS

i usually the dataobjectmanager plugin in ss2, but i think this no longer works in ss3. Using a complextablefield doesn't really work either. I've read about the DataGrid, but i can't see any examples of how to use it.

does any one know anything about this yet?

It looks like Grid Field is replacing both DataObject Manager and Complex Table Field in SS3.

Yeah, I have no intentions of bringing DOM into SS 3.0. The whole point of DOM was to provide an alternative to CTF, and now that SilverStripe has put together a robust entity manager, DOM will have no utility in 3.0.
