Changing the Default CMS Interface Language?

Howdy All

I am working on a website which will have over 50 CMS users who are able to logon (and have their accounts automatically created) via our external authentication.

When a user is created the Interface Language is set to "English - US"

As our site is aimed at a New Zealand audience I would like the Interface Language to default to "English - UK" so they can use the spellchecker feature (unfortunately they're locked down to Internet Explorer 8 at our organisation).

I've had a bit of a search around setting this and all of the search results I've had so far have been about multi-lingual websites.

If anyone could tell me how to set the Default CMS Interface Language that'd be great.
