Hello, I find SS3's new interface really, really GREAT ! But...
After one or two actions in the admin, links become unclickable when I'm using Chrome or Safari for Windows... Is it a known bug ? Am I doing something wrong ? Will we have to force clients to use IE or FF, and nothing else ?

Browser support for 3.0 is officially IE7+, Firefox latest stable, Chrome. It is likely a bug (lots of those currently!) you can raise it as such on open.silverstripe.org.
