Extending Product_Image for image size changes

What is the best way to overwrite methods of Product_Image? I have a guess that it would be to copy that into the same path in mysite/code/products/Product_Image.php and extend the original with my changed methods and such... is that the best way? Do I need to add anything to the _config.php file too?
I am a bit of a SilverStripe noob, sorry.
