Is there any way around this:

It's annoying to have to enter the Title and Description, then save, then go back in to add the images.

The reason why you need to save first is to populate the ID field for the image relationship. Its less than ideal, AFAIK there is no workaround for it. Happy to hear one though

Just thinking out loud: how about setting a 1px transparent image with a defaults array? Kludgy though...
