Changing Output-Format of Date

Hi!
I like to know how to customize the output format of a date field. So, in my config i have already tried to set the locale 'de_DE' with
i18n::enable() and i18n::set_locale('de_DE'). This seems not to affect the output at all. Any Hints?Thank you
