Newbie: Using templates and themes

Hi,
when you first install SS, it uses the templates in the <...>/htdocs/<base directory>/themes/tutorial/templates directory (although, strangely enough, the mysite/_config.php file sets the 'blackcandy' theme).
How you tell SS to use other templates and/or other themes?
What's the best way to start a new website using existing templates?

There is a file called _config.php in the mysite folder, down near the bottom of this you will see a line containing 'blackcandy'. This is where you set which template the site uses by setting it to the name of the folder inside the themes folder.
There are a few ways to go about creating a new theme based on a normal html template but one of the best ways is outlined here http://ssbits.com/building-a-theme-from-a-static-template/

Many thanks Howard. The template tutorial was very useful.
Now, let us say that wish to create a website from scratch. Should you go to the Site Content Manager and delete all the pages (Home, etc.) or is there a better way? Furthermore, let's say that you wish to create two websites. How do you tell the Site Content Manager which site to point to and how do you switch from one to the other?
