Hello,
I am new to Silverstripe framework / cms. I like to use system default theme "simple" in the backend and my custom one in the front-end. How can do this?

SS doesn't support backend themes out of the box, Simple is only used for the front end. If you want to change the theme you can select it in the CMS under the Settings panel.
