Right now I think the fastest way to do it is to find the file in Files & Images, and edit the title to read "flv_thumb_{$ID}", where {$ID} is the ID of the FLV file.

Resource Page Video Thumbnail Problem

The way I got it to work was to make a jpeg thumbnail of the video with photoshop, then just dump it in the video_thumbnails folder in your assets, just make sure the name is the same as the FLV file name. So video1.flv would need a jpeg video1.jpg. not the best way to do it but works
