I was going to post this as a question, but found the answer and so I thought I'd share it on the forum.

It appears that the AdBlock Safari extension introduces a stack of 'Styles' (dropdown menu) in TinyMCE. Wasn't sure where they were coming from, so I investigated.

Easy solution is to disable AdBlock for the domain.

Similar thing with AVG injecting it's own javascript when the linkscanner is enabled. I've seen it make sites load forever on a facebook like button, and thought I must have done something wrong - but then it happened on other sites as well. This was a couple of months ago in FireFox, but still... I've seen it crash certain sites for a day as well, until they fixed it...

I hate it when these things happen, as if having all these different browser standards isn't enough... :-(
