I'd like to change the text that shows when an error occurs in the production environment.

The default text is:
There has been an error
The website server has not been able to respond to your request.

These lines are held in the variables $friendlyErrorMessage and $friendlyErrorDetails. I can edit these in sapphire/dev/debug.php but it would be cleaner to have it somewhere else eg in the _config file.

Any suggestions about how to achieve this?
