I didn't even KNOW about SimpleTinyMCEField -- this works great and will totally suit my needs. I'll just change this third page type I've been talking about with the two $has_one's into a Dataobject and Voila. Thanks for your time @martimiz.

By the way, I did figure out how to exclude the ClassNames in the Site Tree, but I agree that it's kludgey and this solutions is better.
